Coastalina Shrimp and Grits

In historic downtown New Bern, The Chelsea Restaurant is located in the former Drug Store used by Caleb Bradham, inventor of Brad's Drink (later to be known as Pepsi-Cola.) The building is circa 1912, and is listed in the National Historic District. For information, call (252) 637-5469.

6 ounces medium shrimp, peeled and de-veined
2 ounces tomatoes, diced
2 ounces mushrooms, sliced
1 ounce scallions, sliced
2 ounces smoked or kielbasa sausage, sliced
6 ounces quick grits, cooked
Cajun seasoning or blackening spice to taste
2 ounces cheddar-jack cheese blend
1 ounce butter
1 teaspoon garlic, minced

Saute shrimp, garlic and butter. Add tomatoes, mushrooms and scallions. Continue sauteing then add sausage and seasoning to taste. Spoon grits onto plate, sprinkle with half the cheese then top with shrimp mixture. Sprinkle remaining cheese on top and serve immediately.

Serves one (multiply ingredients accordingly).
