Fried sweet potato pies

Apple Cake

1 1/4 cups oil
2 cups sugar
3 eggs
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda
3 cups diced apples (2 large)
1 1/2 cup chopped pecans
1 teaspoon vanilla

Preheat oven to 325 degrees. Mix ingredients in the order listed. Batter will be very stiff until the apples are added. Pour into a greased and floured 9-by-13-inch pan. Bake one hour or until toothpick inserted comes out clean. While cake is warm, pour the sauce over the top.

Sauce

1 1/2 cups brown sugar
1 stick butter or margarine
1/4 cup milk
1 teaspoon vanilla flavoring

Cook brown sugar, butter and milk on medium heat until boiling. Cook two minutes, stirring constantly. Take from burner and add vanilla. Pour over warm cake.
