Recipe courtesy of Cynthia Aiken, a member
of Haywood EMC.
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 cup walnuts, chopped
1/3 cup fresh or dried cranberries, chopped
2 medium Granny Smith apples (or other variety), chopped
1 1/2 cups granulated sugar
1 cup oil
2 teaspoons vanilla
2 eggs
Powdered sugar for garnish
Preheat oven to 350 degrees. Grease 10-inch
tube pan. In medium bowl, sift flour, baking soda, salt, cinnamon
and nutmeg. Stir in walnuts. Peel apples and chop; set aside. In
large bowl, combine sugar, oil, vanilla and eggs. Stir in cranberries
and apples. Stir in flour mixture until moistened; batter will
be stiff. Spoon into prepared pan, spreading evenly. Bake 1 hour
or until cake tester inserted in center comes out clean. Cool cake
in pan on wire rack for 10 minutes. Loosen edges and remove to
completely cool on wire rack. Garnish with powdered sugar after
cake is cooled.
