Fried sweet potato pies

Blueberry Buckle

1/2 cup sugar
1/2 cup shortening
1 egg
1/2 cup milk
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh blueberries (use locally grown if possible)

Cream sugar and shortening. Add egg and milk. Stir until mixed. Sift flour, baking powder and salt together and add to creamed mixture. Put half in a greased 9-inch-by-9-inch pan. Cover with blueberries. Top with rest of the dough mixture.

Topping:
1/2 cup sugar
1/2 cup flour
1/4 cup margarine
1/4 teaspoon cinnamon

Cut margarine into rest of ingredients. Sprinkle over the top of the cake. Bake at 375 degrees for 30-40 minutes.

You may double this recipe for a 9-by-13 pan.
