Apple Fritters
2 cups flour
1 package (8.5 ounce) corn muffin mix
1/2 cup granulated sugar
1 tablespoon baking powder
2 teaspoons ground cinnamon
3 eggs
2/3 cup milk
3 apples (peeled, cored and chopped)
Confectioners’ sugar
In deep pot, heat 3 inches of oil over medium heat until deep fryer thermometer registers 300 degrees. Combine above ingredients mixing well. In batches, drop by tablespoons into hot oil. Fry turning once until browned, about 3 minutes. Drain. Cool and sprinkle with confectioners’ sugar. Makes about 60 fritters. |
