Snicker Doodles

As children, when we returned home from school there were usually some goodies for snack that our Mom, Minnie Kenyon, had baked. It might be cookies, bread pudding, rice pudding. Even now, at age 84, she is occasionally asked to make these Snicker Doodle Cookies.

1 cup soft margarine
1 1/2 cup sugar
2 eggs
2 teaspoons baking powder
1/4 teaspoons salt
2 teaspoons cinnamon
31/2 cups flour
1 teaspoon soda

Mix all together except cinnamon and three tablespoons sugar into soft dough. Shape into small balls. Roll balls in a mixture of two teaspoons cinnamon and three tablespoons sugar. Place on cookie sheets and press flat with a fork dipped in sugar. Bake at 375 until lightly browned. Cool on racks.
