Barbecued Ribs

The Sauce

1/4 cup soy sauce
2 cups rice wine vinegar
1/2 cup hoisin sauce
1/4 cup vegetable oil
1 tablespoon sesame oil
2 teaspoon red pepper flakes
1 tablespoon minced fresh garlic
1/4 cup finely chopped fresh ginger
2 tablespoon sugar

The Meat
8 pounds pork ribs

Combine soy sauce and next 8 ingredients in the food processor. Marinate ribs 2 hours or overnight with two-thirds of the marinade.

Prepare charcoal grill by stacking charcoal to one side. When the coals are ready, place a piece of aluminum foil next to the coals and place grill rack in position. Place ribs away from coals and place lid on grill. Cook 45 minutes with lid in place. Turn and flip once and baste with remaining sauce. Replace lid and continue to baste from time to time.

*Tip - If the coals appear to go out, or they are losing their strength, place a strip of bacon on the rack over the coals and replace the lid. This will fuel the coals and create the heat to help cook the ribs.
