Collard Greens

Recipe courtesy of an Albemarle EMC member.

Water
Collard greens
Fatback
O nions

Wash your collard greens. Soak in salt water to get rid of bugs. Wash again. Roll leaves up like a wrap and cut into strips.Put them in a pot with enough water to cover, and boil them down.Take them out of the pan, throw in some fatback and onions, fry that up, add collard greens, and fry them. This is the old Lumbee way of fixing them.

Yield: Serves 4
