Western Chili Casserole
1 pound ground beef
1 large onion, chopped
1 celery rib, chopped
1 can (15 ounces) chili with beans
11⁄2 cups corn chips, coarsely crushed, divided
3⁄4 cup shredded cheddar cheese
In a large skillet, cook the beef, onion and
celery over medium heat until meat in no longer pink and vegetables
are tender; drain. Stir in the chili and 1⁄2 cup of chips.
Transfer to a greased 11⁄2-quart baking dish. Sprinkle remaining
chips around edge of dish; fill enter with cheese. Bake, uncovered,
at 350 degrees for 10 minutes or until heated through.
Yield: 4 servings.
