Sweet Potato Casserole
This is the best sweet potato casserole I have ever tasked. I make it every Thanksgiving and Christmas. Also, sweet potato is a great North Carolina farm product and also good for your health.

3 medium sweet potatoes, cooked in jackets
1 stick margarine
1/2 cup white sugar
1/4 cup brown sugar
1/4 cup canned milk
2 whole eggs
1 teaspoon vanilla
1 teaspoon cinnamon
Peel and mash potatoes. Melt margarine and pour over mashed potatoes. Add other ingredients and pour into casserole dish.
Topping
1 cup corn flakes, crushed
1 cup brown sugar
1/2 stick margarine, melted
1/2 cup pecans
Mix and spread over potato mixture. Bake at 425 degrees for 15 minutes.
