Sons’ Favorite Breakfast Casserole

Many years ago, my dear sister shared a recipe with me that soon became a Christmas tradition in our household. At the time, both my sons were very young. On Christmas morning while we enjoyed what Santa brought, our breakfast (which I had prepared earlier) would be baking in the oven. As the aroma drifted into the den, my sons would always ask excitedly, “Can we eat now, Mama?”

1 pound bulk sausage
6 eggs
8 ounces sharp grated cheese
2 cups milk
Salt and pepper
2 slices bread

Fry sausage and drain. Place in 2-quart casserole dish. Break bread in small pieces and place on top of sausage. Put grated cheese over this. Mix eggs, milk and spices beating well; pour over all. Cover and refrigerate overnight. Bake uncovered 35 to 40 minutes at 350 degrees.

Serves 6.
