Winterberry Mountain Cookies

Michele Watson, Lexington, EnergyUnited

1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/4 cup butter or margarine
1/4 cup shortening
1/4 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla
1 egg
1 cup instant quick cooking oats
2 tablespoons milk
1 1/2 cup dried cranberries
1 cup white chocolate morsels

Combine flour, baking soda, salt and pumpkin pie spice; set aside. Combine sugars, shortening and butter; beat until fluffy. Add milk, egg and vanilla and beat well. Add flour mixture and beat until well mixed. Add oatmeal, dried cranberries and white chocolate morsels; stir with wooden spoon. Drop by tablespoons onto cookie sheet (6 per sheet). Bake at 350 degrees for 10 minutes or until a light brown color shows on the peaks. These are too done if they turn a light brown. Cool and enjoy.
