A Cowboy’s Christmas Cookie

This recipe was a tradition for the Carroll Family Dairy in Cherryville. These cookies were made during the holidays as a special treat for the members of the family. They proved to be filling enough to get the hardest tasks completed around the farm on a cold winter day. Even though the dairy is no longer in operation, the recipe has been passed down and continues to be a tradition.

1 cup shortening
2 cups white flour
1 cup brown sugar (packed)
1 cup white sugar
2 large eggs
1 teaspoon vanilla flavoring
1 package (6 ounces) chocolate chips
1 cup walnuts
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
2 cups quick oats

First cream the shortening, sugars, eggs and vanilla flavoring together. Add salt, baking powder, baking soda, flour and oats to the creamed mixture. Finally, add nuts and chocolate chips. Bake at 325 degrees for 10 to 12 minutes.
