You often see this dish as a sidekick to Thanksgiving dinner, but it can add a hint of fall festivity to any gathering. And it’s sweet enough to qualify as dessert!
Preheat oven to 375 degrees. Grease a square, 8-inch Pyrex dish. Beat eggs and sugar until fluffy. Add milk, vanilla, salt and butter. Stir in sweet potatoes.
Pour into baking dish and sprinkle chopped pecans on top, if so desired. Bake for 25–35 minutes or until golden and middle is mostly set. Enjoy while still warm.
*Grate sweet potatoes just prior to adding to prevent them from turning brown.
