Fried sweet potato pies

Applesauce Muffins

This is a specialty recipe of the Yellow House on Plott Creek Road, a bed and breakfast in Waynesville, NC.

1 stick butter
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups flour
1/2 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoons baking soda
1/2 cup raisins
1/2 cup pecans
1/2 cups applesauce

Preheat oven to 400 degrees. Combine butter, sugar, egg and vanilla; mix well. Add dry ingredients, raisins, pecans, and applesauce. Pour into greased muffin tins, filling cups about 2/3 full. Bake in preheated oven for 10 minutes.

Yields one dozen muffins.
