Fried sweet potato pies

Chicken Pie

1 cup boneless chicken in cubes
1/2 cup peas
1/2 cup potatoes (cut in cubes)
1 cup milk
1/2 teaspoon butter or margarine
1/2 teaspoon white flour
1/2 cup crackers (in powder form)
1 egg (well beaten)
Salt and pepper to taste

Boil chicken cubes in 2 cups of water with salt. Remove when tender.
In the same pan with remaining soup, boil peas and potato cubes until tender and water is almost gone.

Heat butter in a pan. Add white flour and simmer on low heat until the flour is well cooked. Then increase the heat. Add salt and pepper as well as 1 cup of boiling milk. Stir until it forms a paste. Add chicken, peas and potatoes. Pour it into a well-greased pan, coated with ground crackers and well-beaten egg.

Put the pan in a fully pre-heated oven for 2 minutes (with broiler on).

Serve with Garlic bread or boiled vegetables.

Yield: 3 servings
