Chicken with Walnuts

1/3 cup soy sauce
1 1/2 Tbsp. dry sherry
3/4 tsp ground ginger
1 1/2 pounds boneless chicken breast, cut into 1-inch pieces
7 Tbsp. cooking oil
1/2 cup sliced green onion
1 large clove garlic, crushed
1 1/2 cup walnuts, coarsely chopped 

Combine soy sauce, dry sherry, ginger and chicken in a small bowl. Mix and let stand 15 minutes. Heat wok or large skillet. Add 4 TBL cooking oil. Add green onion, garlic and walnuts and cook while stirring for 3 minutes. Discard garlic. Transfer walnut-onion mixture to small bowl. Add remaining oil to wok. Heat. Add chicken and soy sauce mixture. Stirfry 6 minutes or until chicken is cooked and coated with soy sauce mixture. Return walnut-onion mixture to wok and toss to mix. Serve.
