Fried sweet potato pies

Sweet Potato Sonker

4 cups of sweet potatoes
1 1/2 cups of white sugar
1 stick butter
2 tsp. vanilla flavoring 10 Butter-Me-Not Biscuits
2 cups sweet milk

Use a pan or casserole dish about 3 inches deep and 28 inches around. Peel and slice sweet potatoes in water and cook until done or almost dry.Put 2 cups of cooked potatoes in dish,spread over bottom of dish. Pour 3/4 cups white sugaar on top slices,1/2 stick of butter on top of sugar; then 1 tsp.vanilla over top of sugar (just sprinkle it on top the best you can). Take the 5 biscuits, roll out and put on top. Then pour 1 cup sweet milk over top of sonker. Cook on 475 until biscuits are brown. Then take out,turn biscuits over and brown on other side. After you do this, start all over for another layer.

Yield: 4 servings
