“The Sauce Worth the Cost” is how folks describe Billy’s distinctive, vinegar-based sauce. The eastern North Carolina-style treat can be slathered on chicken, pork, fried turkey, seafood, beans and other cookout fare. Some people even put it on collards and chopped summer vegetables such as cucumbers to give them an extra kick. Billy Trevathan first marketed his homemade recipe back in 1994 for a fundraiser at his Tarboro church. He and wife, Jean, both members of Edgecombe-Martin County EMC, have been selling it ever since. Sauces come in hot, mild and a cocktail sauce. Two in a pack cost $7.50; three in a pack $10.75; a case of 12 bottles is $30. Billy’s Sauce can be spied on the shelves of Piggly-Wiggly and IGA stores from Raleigh to the beach.
