Cranberry-Pineapple Minis

Ingredients

  • 1 can (20 ounces) Dole Crushed Pineapple, in juice, undrained
  • 2 packages (3 ounces each) Jell-O Raspberry Flavor Gelatin
  • 1 can (16 ounces) whole berry cranberry sauce
  • ⅔ cup chopped Planters Walnuts
  • 1 apple, chopped

Directions

  1. Drain pineapple, reserving juice.

  2. Add enough water to reserved juice to measure 2½ cups; pour into saucepan. Bring to boil. 

  3. Add dry gelatin mixes to saucepan; stir 2 minutes until completely dissolved. Stir in pineapple, cranberry sauce, nuts and apples. 

  4. Spoon into 24 paper-lined muffin cups. Refrigerate 2½ hours or until firm. Remove desserts from liners before serving.

  • My sister prepared this dish for Thanksgiving Dinner. She substituted cherry jello for the rasberry jello. It was delicious. I'm adding this one to my recipe collection. Give it a 5 star rating!
