Preheat oven to 375°.
Grate the sweet potatoes. In a large mixing bowl, pour the boiling water over the sweet potatoes then immediately add butter and stir until butter has melted.
In a separate bowl combine sugar, eggs, cinnamon, nutmeg, vanilla and coconut; mix well. Pour into the sweet potato mixture.
Gradually add flour until mixture reaches the desired consistency.
Pour into a 13-by-9-inch greased baking dish and bake for 40 to 50 minutes. Use a toothpick to check for doneness.
