Cornbread Cake

Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup canola oil
  • 1½ cups self-rising flour
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees.

  2. Grease and flour a 9-by-13-inch pan and set aside.

  3. In a mixing bowl, combine the ingredients in the order listed.

  4. Pour into pan evenly and bake for 35 minutes or until tested done.

  • It is called Cornbread Cake - was wondering if it should have some cornmeal listed in the ingrredients, otherwise why call it cornbread cake. I would no want to try this recipe as the name doesn't fit the ingredients.

  • Hi Jeanette! Yes this recipe does not use cornmeal. It’s called “Cornbread Cake” because the texture is similar to cornbread. It’s not uncommon for cornbread recipes to omit cornmeal, but most of the cornbread recipes on our site do use it, including this one: https://www.carolinacountry.com/carolina-kitchen/side-dishes/corny-cornbread
