Spiced Pumpkin Apple Loaf

Fall fruits star in this moist, spice-laden loaf. Pair a slice with some tea or coffee to warm you up on a chilly morning!

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1½ teaspoons salt
  • 3 cups sugar
  • 1 (15-ounce) can pumpkin
  • 4 large eggs
  • 1 cup vegetable oil
  • ½ cup apple juice or water
  • 1 large baking apple 
(or 2 smaller ones), 
peeled, cored and 
small diced

Directions

  1. Preheat oven to 350 degrees. 

  2. Grease and flour 2, 9-by-5-inch loaf pans.

  3. Combine flour, cinnamon, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and apple juice in large mixing bowl and beat until just blended.

  4. Add pumpkin mixture to flour mixture, stir just until moistened.

  5. Fold in apples and spoon batter into pans. Bake for 65–70 minutes or until toothpick inserted in middle comes out clean.

  6. Cool 10 minutes in pans and finish cooling out of pan on wire racks.
