Sweet Potato Biscuits

North Carolina sweet pototoes add moisture and flavor to these easy-to-make biscuits. Try them with a weeknight dinner, or serve them with a sunday brunch. Your crowd will be wowwed!

Ingredients

  • ¾ cup mashed sweet potato (about 1 potato)
  • ⅔ cup milk
  • 4 tablespoons melted butter
  • 1 tablespoon brown sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 1½ cups flour

Directions

  1. Preheat oven to 450 degrees.

  2. Combine sweet potato, milk, butter and sugar well.

  3. Mix the remaining dry ingredients separately, then add to the sweet potato mixture in two additions, scraping bowl between each. Incorporate dry ingredients (don’t overmix).

  4. Pour batter onto a very well-floured board and pat until 1½-inches thick. Add flour as needed to ensure the dough isn’t too sticky.

  5. Cut out biscuits with cutter or small glass and place on greased pan. Bake 10–15 minutes and cool on wire rack.
