Coconut Cake

A spring-time favorite! Get a head start on this classic cake with yellow cake mix.

Editor's note: The icing is a little runny as it is meant to soak into the layers to moisten the cake. Too runny for your taste? You can also add more marshmallows.

Ingredients

  • 1 box yellow cake mix
  • 8 ounces sour cream
  • 2/3 cup oil
  • 4 eggs
Icing
  • 2½ cups granulated sugar
  • 3 cups water
  • 1 pound fine shredded coconut
  • 1 teaspoon vanilla
  • 10–15 large marshmallows

Directions

  1. Mix cake ingredients and bake according to directions on box.

  2. For icing, mix sugar, water, coconut and vanilla and bring to a boil. Turn heat down to medium and boil for 20 minutes. Take off burner and add marshmallows; stir until melted. 

  3. Cool slightly and spoon on each layer while cake is still warm.

  • I just made this and the icing is VERY watery. I am boiling it further and will add more Marshmallows to try to fix it. I used unsweetened coconut as it seemed it would be much too sweet otherwise. If that doesn't work, I'll try some beaten egg whites or something.

  • I am so sorry you had trouble with this recipe. The icing is a little runny as it soaks into the layers. This makes the cake very moist. If it is too runny for you you can also add more marshmallows.

  • I made this recipe and the icing was also very (a lot) watery. A helpful note would be to perhaps know that this is intentional (or not). Other recipes call for far less water.
