Pineapple Nut Cake
Ingredients
- 2 eggs
- 2 cups plain flour
- 2 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 1 can (20 ounces) crushed pineapple with juice
- ½ cup pecans
Topping:
- 1 package (8-ounce) cream cheese
- ½ stick butter
- 1¾ cups powdered sugar
- 1 teaspoon vanilla
- ½ cup pecans
Directions
Mix all ingredients together by hand. Bake in a greased 9-by-13-inch baking pan at 325 degrees for 40 minutes or until tested done.
Topping:
Mix together and frost while cake is still warm.
