Tater Dipped Chicken

Chicken and mashed potatoes? Yum! Chicken coated in potatoes?! Sounds a little off the wall, but guess what? Turns out it’s golden, buttery, crunchy goodness encasing plump, juicy chicken!

Ingredients

  • ¼ cup butter

  • 3 eggs, beaten

  • 6 tablespoons water

  • 3 cups dry potato flakes

  • 5 chicken legs

  • 4 chicken thighs

  • Salt to taste

Directions

  1. Preheat oven to 400 degrees. Melt butter in shallow baking pan and set aside.

  2. Beat eggs in a wide, shallow bowl and add water. Dip chicken parts in egg mixture and then roll in potato flakes. (If you prefer a thicker coating, repeat dipping and rolling steps, doubling the amounts of egg, water and potato flakes.) Season with salt and place in buttered pan.

  3. Bake chicken for 30 minutes. Remove from oven and turn each piece. Then bake for 30 minutes longer until golden brown.
