Baked Parmesan Crusted Chicken

Mayonnaise on chicken?! Trust us, all that extra fat lends flavor and moisture resulting in tender cutlets of chicken that carry a panko crunch.

Ingredients

  • 2 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon herbs de provence
  • 1 tablespoon minced fresh basil
  • Salt/pepper
  • ½ cup mayonnaise
  • ¼ cup shredded Parmesan cheese
  • Seasoned panko

Directions

  1. Preheat oven to 400 degrees.

  2. Slice your chicken in half to create four thin cutlets. Marinate in the olive oil, onion powder, garlic powder, herbs de provence and basil while you mix up the mayonnaise and shredded parmesan.

  3. Place the marinated chicken on a greased or lined baking sheet. Sprinkle the cutlets with salt and pepper.Spoon the mayonnaise/parmesan mixture on top of each cutlet evenly. Sprinkle seasoned panko liberally on top. And drizzle a little olive oil over each panko-topped cutlet for extra crunch!

  4. Bake in your preheated oven for 30–35 minutes until your panko is light brown. Serve immediately to maintain that crispiness.
