You don’t need much more than butter and Tabasco to complement the flavor of soft-shell crabs. That slightly crunchy shell yields the soft, rich meat inside. Delish!
Preheat the grill to medium-high.
Combine butter, salt, pepper and Tabasco. Cool. Brush both sides of crabs with the mixture.
Place crabs, top sides down, over hot coals. Close grill and cook until shell turns bright red, about 2½ to 3 minutes. Turn and repeat on other sides.
Serve with tartar sauce, if desired.
