Tater Dipped Chicken Originally published July 1970
Chicken and mashed potatoes? Yum! Chicken coated in potatoes?! Sounds a little off the wall, but guess what? Turns out it’s golden, buttery, crunchy goodness encasing plump, juicy chicken!
Ingredients
-
¼ cup butter
-
3 eggs, beaten
-
6 tablespoons water
-
3 cups dry potato flakes
-
5 chicken legs
-
4 chicken thighs
-
Salt to taste
Directions
-
Preheat oven to 400 degrees. Melt butter in shallow baking pan and set aside.
-
Beat eggs in a wide, shallow bowl and add water. Dip chicken parts in egg mixture and then roll in potato flakes. (If you prefer a thicker coating, repeat dipping and rolling steps, doubling the amounts of egg, water and potato flakes.) Season with salt and place in buttered pan.
-
Bake chicken for 30 minutes. Remove from oven and turn each piece. Then bake for 30 minutes longer until golden brown.
