Grated Sweet Potato Pudding


  • 4 large sweet potatoes
  • 2 cups boiling water
  • 1 stick butter
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla flavoring
  • 1/2 cup shredded coconut
  • 1/2 cup flour


  1. Preheat oven to 375°.

  2. Grate the sweet potatoes. In a large mixing bowl, pour the boiling water over the sweet potatoes then immediately add butter and stir until butter has melted.

  3. In a separate bowl combine sugar, eggs, cinnamon, nutmeg, vanilla and coconut; mix well. Pour into the sweet potato mixture.

  4. Gradually add flour until mixture reaches the desired consistency.

  5. Pour into a 13-by-9-inch greased baking dish and bake for 40 to 50 minutes. Use a toothpick to check for doneness.
