Holiday Leftovers

Transforming your leftover holiday turkey or ham from mere meat you reheat into a tasty dish may be easier than you think.

For example, fresh herbs, creamy cheeses and cooking wines can be used to add dashes of flavor. This recipe from Guy Meikle, corporate chef for Mizkan America, Inc., offer a new twist on leftover turkey: Family Barbecue Turkey Mini Flatbread.

Ham it up!

Here are some delicious, easy ways to enjoy your leftover cooked ham:

  • Make a ham and cheese pizza. Start with a store-bought crust, then top with grated cheese. Mozzarella is fine for the foundation, but consider adding additional cheeses, too, such as Monterey Jack or goat cheese. Add sliced bits of ham and other toppings of your choosing. Creative choices include chopped figs, pineapple and asparagus.
  • Add a sprinkle of brown sugar to ham slices and brown them with some butter in a frying pan. Serve them with your eggs at breakfast.
  • Make a grilled Swiss cheese and ham sandwich, adding a slather or two of spicy mustard on the ham slices.
  • Add diced bits of ham to leftover scalloped potatoes. Sprinkle with paprika and garlic powder.
  • Sauté slivers of ham with fresh garlic and butter, then stir them into hot, drained spaghetti or fettucine. Stir in a basic cream sauce.
  • Mix ham with wild rice and green peas. Top with freshly grated Parmesan cheese.
  • Pair bits of ham with lentil beans seasoned with onion. Top with fresh parsley.
