Spiced Plum Cream Pie

Sometimes, a simple pie is all that’s needed to round out Easter lunch or a spring supper… or just to enjoy all by itself. Not a plum fan? You can sub other fruits like summer peaches with the same tasty outcome!

Ingredients

  • ½ teaspoon apple pie spice
  • ½ teaspoon ground ginger
  • 1 tablespoon sugar
  • 1 pie crust (9-inch), unbaked
  • 3 tablespoons cold butter
  • 4 cups plums, pitted and thinly sliced (about 6 plums)
  • ⅔ cup sugar
  • 2 tablespoons flour
  • 1 cup heavy cream

Directions

  1. Preheat oven to 425 degrees.

  2. Combine spices with 1 tablespoon of sugar.

  3. Dust bottom of crust with 1 teaspoon of sugar-spice mix, pressing into soft dough.

  4. Grate cold butter over spiced crust. Cover with plums.

  5. Add remaining spice mix to ⅔ cup sugar, flour and cream. Whisk to blend well.

  6. Pour over plums and bake on center rack about 35–40 minutes, until center is set. Cool before serving.

Note: If crust edge gets browned before pie is set, cover pie with foil to finish baking.

    • Hi Barbara,
      Really sorry that the pie didn’t turn out! I’d suggest adding another tablespoon or two of flour, especially if the fruit you’re using is especially juicy. If you went with plums, I try to pick out ripe but firm ones. If yours were ripe but on the softer side, that extra juice would probably have an impact and would need a little more flour to set up properly. Letting the pie cool before serving helps too.
