Ingredients
- 14 dates, pitted
- ½ cup unsalted almonds
- 1½ cups old-fashioned oats
- 3 tablespoons vegetable oil
- 1½ cups nonfat yogurt
- 1 cup freeze-dried strawberries
- ½ cup blueberries
- ¾ cup raspberries
- ¾ cup strawberries, quartered
Directions
-
Preheat oven to 350 degrees.
-
Place the dates, almonds, oats and salt into a food processor (a blender will also work). Pulse the mixture to a fine crumb. Add the vegetable oil and pulse again.
-
Divide the granola mixture between 12 muffin cups. Firmly pack the granola into the bottom and sides of cups, leaving enough room for the yogurt. Bake for 12–13 minutes.
-
Meanwhile, rinse the food processor with water and place back on the base. Place the yogurt and freeze dried-strawberries into the food processor and pulse until smooth.
-
Remove the granola cups from the oven and let cool completely.
-
Now it’s time to decorate! Remove the cups and place on a plate. Add the yogurt mixture and decorate with the berries.
