Fee Fie Faux Fried Okra

Ingredients

  • 1 pound fresh or frozen okra, cut
  • ½ cup yellow cornmeal
  • ½ cup panko bread crumbs
  • 1 teaspoon garlic salt
  • ¼ teaspoon freshly ground black pepper
  • Butter flavored cooking spray

Directions

  1. Preheat oven to 375 degrees.

  2. In a microwave-safe casserole dish, cook the okra (covered) in a little water for about 5 minutes on high.

  3. While the okra cooks, mix all dry ingredients in a gallon-size plastic food storage bag. With a slotted spoon, strain the okra and add it to the bag, tossing to coat evenly.

  4. Liberally spray a baking sheet with cooking spray, and bake 15 or 20 minutes until golden and crispy.
