This Month’s Issue: Hit the Links

I own a set of golf clubs, but I’ll admit: my skills didn’t evolve much beyond what I learned on the Putt-Putt course growing up. Regardless of one’s skill on the links, North Carolina provides ample opportunity to enjoy its beautiful scenery — from the mountains to the coast — on award-winning and, in some cases, world-renowned golf courses. (There’s a lot of good Putt-Putt out there, too.) Also, find out more about electric co-op lineworkers and the families who support them.

Piggy Livermush Musubi

This winning liver mush recipe from the 2022 annual Liver Mush Festival in Shelby, is a twist on Spam Musubi, a traditional Hawaiian snack. Build your Musubi by layering Homemade Buttered Biscuits, Strawberry Lemon Jam, Cheesy Sheet Pan Eggs, and Mack’s Livermush. Final assembly includes wrapping it all up with nori seaweed.
