Ingredients
1 1/4 cups oil
2 cups sugar
3 eggs
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda
3 cups diced apples (2 large)
1 1/2 cup chopped pecans
1 teaspoon vanilla
Sauce
1 1/2 cups brown sugar
1 stick butter or margarine
1/4 cup milk
1 teaspoon vanilla flavoring
Directions
Preheat oven to 325 degrees. Mix ingredients in the order listed. Batter will be very stiff until the apples are added. Pour into a greased and floured 9-by-13-inch pan. Bake one hour or until toothpick inserted comes out clean. While cake is warm, pour the sauce over the top.
For the sauce, cook brown sugar, butter and milk on medium heat until boiling. Cook two minutes, stirring constantly. Take from burner and add vanilla. Pour over warm cake.
