NC First Lady Kristin Cooper’s Chocolate Chip Cookies

Servings: 3 to 4 dozen cookies
This recipe, submitted to us by NC First Lady Kristin Cooper, is a favorite of Governor Cooper's. Before sampling this cherished family recipe, we sat down with the governor to reflect on his time in office thus far and discuss issues important to electric co-op members across the state. Ingredients

2¼ cups flour
1 teaspoon baking soda
1 teaspoon salt
1 stick butter
½ cup shortening
¾ cup granulated (white) sugar
¾ cup brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips
2 cups pecans

Directions

  1. Preheat oven to 375 degrees.

  2. Combine flour, baking soda and salt in a small bowl and set aside.

  3. Beat butter, shortening, granulated sugar, brown sugar and vanilla in a large bowl until creamy. Beat in eggs one at a time. Gradually stir in flour mixture. Stir in chocolate chips and nuts.

  4. Drop by rounded tablespoons onto ungreased baking sheets.

  5. Bake for 9 to 11 minutes until light golden brown. Don’t overbake if you want them to stay soft and chewy. Remove to wire racks to cool.
