Pork Chops Florentine

With creamy roasted garlic sauce
Season pork chops on both sides with salt and pepper, to taste.
In large skillet, heat 2 tablespoons oil over medium heat. Cook pork chops 4–5 minutes per side until internal temperature reaches 145 degrees. Remove pork chops from pan and keep warm.
In same skillet, heat remaining oil over medium heat. Add minced garlic and partially cooked bacon to skillet; cook until tender, about 3 minutes. Add chicken stock and bring to a simmer.
Reduce heat to low and add heavy cream. Season with salt and pepper.
Add spinach and tomatoes to sauce; let spinach wilt. Stir in Parmesan cheese and Italian seasoning; simmer about 3 minutes.
Return pork chops to pan along with juices. Spoon Florentine sauce over chops; simmer 3–5 minutes.
