Spring Strawberry Slaw

With Honey Citrus Vinaigrette

Spring has arrived when strawberry fields are bursting full of fruit! Swing by your local farm and pick some gorgeous red berries to make this citrusy strawberry slaw sing! Serve alongside our deviled crab.

Ingredients

Slaw

1 bag (10-ounce) angel hair slaw
1 cup English cucumbers, thinly sliced, unpeeled
1 cup red onion, thinly sliced
2–3 stalks celery, thinly sliced
5 radishes, chopped
1 quart fresh strawberries, sliced
1 tablespoon poppy seeds
2 teaspoons kosher salt
½ cup packed fresh dill, chopped
½ cup packed fresh cilantro, chopped

Honey Citrus Vinaigrette

¼ cup honey
¼ cup light oil (like sunflower or grapeseed)
3 tablespoons apple cider vinegar
Zest of 1 lime, lemon and orange
4 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
Pinch of salt and black pepper

Directions

  1. Combine slaw ingredients. In a separate bowl, whisk together vinaigrette. About 20–30 minutes before serving time, toss the two together.
