You’re relatively new to the area, how do you like it here?
I grew up in Charlotte and lived my entire life there, and it was time for a change of pace and lifestyle. My husband, Michael, and I lived in a condo at a busy intersection, and now we live in a house we love on a dirt road. I had a sometime hour-and-a-half commute each way, and now I’m home in 10 minutes. We both grew up vacationing in North Myrtle Beach and always wanted to live on the coast; now we pinch ourselves every time we’re walking on the beach. It’s a new life for us and we just love it. We’ve even taken up thrifting! I found a Peterboro basket recently for $9.99 that retails for $139. It’s fun!
How did you and your husband meet?
Well, my husband was adopted, and we met while he was searching for his birth parents. He had inaccurate information about his birth father, and, searching online, he thought that I might be his sister. DNA tests confirmed that I am definitely not and the rest is history. The funny thing is that I am distantly related to his adoptive family.
You’re a big animal lover?
We both are! We have a dog and three cats. Our 12-year-old mini dachshund mix, named Scooter, might be part Chihuahua, because he’s normally the sweetest thing, but he does have a short fuse. Butterscotch is our five-year-old red tabby, and is just a love, except when it’s at odds with our new kitten, Moon Pie. My husband brought him home from the neighbors one night, because he didn’t get along with their cat. Lollipop is the middle one, so adorable, and everyone says that her face looks like the front of an airplane. Luckily, Scooter gets along with them all. It’s an adventure every day!
Susan’s Banana Bread
- 2 eggs, beaten
- ⅓ cup buttermilk
- ½ cup vegetable oil
- 1 cup mashed ripe bananas
- 1½ cup white sugar
- 1¾ cup all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup chopped pecans, optional
- Preheat oven to 325 degrees.
- Spray 9×5 loaf pan with non-stick baking spray.
- Blend the eggs, buttermilk, oil, and bananas together.
- Sift together the sugar, flour, baking soda, and salt and slowly add to banana mixture.
- Stir in pecans and mix well.
- Pour into prepared loaf pan and bake 1 hour and 20 minutes. Enjoy!
