Apple Matzo Kugel

This traditional Jewish dish is often served on Shabbat and Jewish holidays. It's made without chametz (leavening, wheat, barley, spelt, rye or oats), making it a tasty option to celebrate Passover.

Ingredients

3 to 4 cups Manischewitz® Matzo Farfel or 4 Manischewitz® Matzos broken into small pieces
3 eggs
½ teaspoon salt
½ cup sugar
¼ cup melted butter or pareve margarine
1 teaspoon cinnamon
½ cup chopped walnuts
4 large apples, pared and chopped
½ cup raisins
Butter or pareve margarine

Directions

  1. Soak farfel or matzo pieces in water until soft. Drain but do not squeeze dry.

  2. Beat eggs with salt, sugar, melted butter or margarine and cinnamon. Add to matzo mixture. Stir in chopped nuts, chopped apples and raisins.

  3. Pour into 8×8 coated pan. Dot with additional butter or margarine.

  4. Bake using an 8×8 inch square pan in a moderate oven (350 degrees) for 45 minutes or until lightly browned.
