Flounder Fillets with Lemon-Butter Sauce

A mild-tasting fish with a sweet undertone, flounder pairs well with this perky lemon-butter sauce.

Ingredients

4 flounder fillets
Salt
Black pepper, freshly ground
Flour
2 tablespoons canola oil
2 tablespoons butter
½ cup butter
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
¼ teaspoon freshly ground white pepper
2 tablespoons fresh tarragon, chopped
