Ingredients

1 cup pecan halves (toasted)
4 Gala apples
1 (6 ounce) package baby spinach
1 (5 ounce) package spring mix
3 ounces extra-sharp white cheddar cheese (shaved)
Salt & pepper to taste

Vinaigrette

⅔ cup canola oil
⅓ cup Apple cider vinegar
2 green onions, minced
3 tablespoons light brown sugar
3 tablespoons fresh basil, chopped
1 tablespoon Dijon mustard
½ teaspoon dried crushed red pepper
¼ teaspoon salt

Directions

  1. Coat the grill with olive oil or cooking spray.

  2. Preheat the grill to a medium-high heat. Cut the apples crosswise into ¼-inch thick rings. Grill apple rings, covered with grill lid, 2–3 minutes on each side or until crisp-tender. Arrange the spinach, mixed greens on a plate and top with apples, cheese and toasted pecans. Season with salt and pepper and serve with the vinaigrette (whisk all ingredients until blended).
