Ingredients

3 pounds cabbage, chopped
2 peppers (one red and one green), chopped
2 medium white onions, chopped
2 tablespoons salt
2 tablespoons mustard seed
1 (4-ounce) jar pimento, diced
2 cups vinegar (red wine distilled vinegar)
2 cups water
2 cups sugar

Directions

  1. Mix first six ingredients. Then bring vinegar, water and sugar to a boil, let cool and pour over cabbage mixture. Mix well and put in a jar and keep in refrigerator. Will keep for weeks.
