It's persimmon season! Whether they are the bounty of your backyard or a seasonal offering at your local grocer, persimmons are a winter-only treasure. Satisfy your craving for that fragrant cold-weather flavor.
Ingredients
1 cup light brown sugar, packed
½ cup granulated sugar
3½ cups flour
1 teaspoon salt
1 teaspoon baking soda
1½ teaspoons cinnamon
½ cup melted butter
2 eggs
3 cups milk
1 teaspoon vanilla extract
3 cups persimmon pulp
Whipped topping, optional
Directions
Preheat oven to 325 degrees.
In a large mixing bowl, combine sugars, flour, salt, baking soda and cinnamon.
Stir in melted butter, eggs, milk, vanilla and persimmon pulp. Using a stand or hand mixer, mix until smooth.
Pour into a greased 9 x 13-inch casserole dish.
Bake for about an hour, or until a toothpick comes out clean. Cool before serving.
Serve with whipped topping, if you’d like.
