1 teaspoon salt or to taste
1 teaspoon freshly ground black pepper or to taste
2 English cucumbers, sliced
¼-inch thick and cut in half
3 medium-sized tomatoes, cut into small wedges
1 small red onion, sliced and separated into rings and halved (or white if you prefer less spicy)
Optional additions: crumbled feta, mozzarella balls, avocado chunks, chopped fennel bulb

Directions

  1. Whisk water, vinegar, oil, sugar, salt and pepper together in a large bowl until smooth.

  2. Add cucumbers, tomatoes and onion and stir to coat.

  3. Cover bowl and refrigerate for at least 2 hours. Serve.
