Since 1973, representatives from extension clubs in Carteret County, North Carolina have tested new ways of handling, storing and preparing seafood caught off the North Carolina coast. Their resulting seafood wisdom has been captured in Mariner’s Menu: 30 Years of Fresh Seafood Ideas by Joyce Taylor. Many of the book’s more than 160 original recipes have been republished by North Carolina Sea Grant over the years. Here are six selections to help fill your summer menu with scrumptious seafood!
