International Electrification

Reliable and affordable electricity, instantly available at the flip of a switch, is a modern convenience that’s easy to take for granted. Although some of us remember the days before electricity, for most it’s always been a part of life. As we discuss in this month’s issue, that’s not the case for millions of people across the world without access to electricity. But a group of North Carolina electric co-op lineworkers recently traveled to Guatemala to move the needle just a bit, brining life-changing power to a remote village. It’s an inspiring story, and I highly recommend the related video in the story. It was a tear-jerker for many in our office.

Guatemala’s national dish, Pepián de Pollo is considered a flavorful comfort food. Rooted in Mayan cuisine with Spanish influences, the falling-apart, twice cooked chicken in this stew goes well with rice and avocado. You’d think its earthy, rustic sauce made of pepitas, tomatoes and dried peppers would be hot, but fear not, it’s on the mild side.
