Grilled Prosciutto Asparagus

Make these finger-friendly grillables ahead of time, then throw them on the grill for an easy appetizer. With a dish as yummy as this, your first course is a wrap!

Ingredients

½ pound thinly sliced prosciutto
1 log (4 ounces) fresh goat cheese
1 pound fresh asparagus, trimmed

Directions

  1. Cut prosciutto slices in half; spread with cheese.

  2. Wrap a prosciutto piece around two asparagus spear; secure ends with toothpicks.

  3. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.

  4. Grill, covered, over medium heat for 6–8 minutes or until prosciutto is crisp, turning once.

  5. Discard toothpicks.
